Recipe – ‘Ancient Grain Granola’ with Coconut Chia Yogurt & Goji Berry Cream

Serves 4

Coconut Chia Yogurt

  • 2c Plain Yogurt of Choice
  • 2 tablespoons Chia seeds
  • 2 tablespoons shredded toasted or raw coconut
  • TT Honey


  • Mix Chia Seeds, Coconut, and Honey thoroughly with Yogurt
  • Refrigerate

Goji Cream

  • 1/4cup goji berries
  • 1cup heavy cream, or dairy substitute


  • Combine all ingredients into a small saucepan or microwaveable safe bowl. Heat until gojis berries are soft and cream is warm but not boiling
  • Bring to a simmer remove from heat, blend, strain
  • Refrigerate

Infused Coconut Oil

  • 1c Coconut Oil
  • 7g Flower / 14g Shake / .5g Distillate / 1g Solventless / As Directed Tincture


  • If using Flower or Shake, decarboxylate first, then infuse for at least 1 hour
  • Warm oil to liquid state, add concentrate of choice, stir lightly but thoroughly
  • Continue to stir for 15 minutes for full incorporation
  • Strain if using flower, shake, or solventless

Put It All Together

  • 2c Coconut Cia Yogurt, divided between 4 bowls or mason jars
  • 2c Granola of Choice, top the coconut chia yogurt with granola
  • 4tsp Infused Coconut oil, 1tsp melted per cup over granola
  • 1c Goji Cream, divided evenly over granola
  • Mint Sprig & Serve!
