At the beginning the most difficult part of eliminating grains for me was in the morning. I absolutely adore cereal and of course it’s not allowed except you can make homemade granola and it is such a great substitute! ! Whenever you buy it in the stores, they still add too much sugar. I know there’s a keto cereal out now but I haven’t tried it yet. Many of us are hooked on having some form of bread especially in the morning. I switched to scrambled eggs and omelets’ because I missed having my bread sopped up in the fried eggs!! Oh the sacrifices we have to make. Now I don’t miss it at all, in fact breakfast is so unnecessary. Fasting is becoming very healthy today. The 12 hour fast from going to bed and waiting 12 hours to eat your first meal is so easy!! You can read more extensively on this subject (fasting) online. This goes against everything we learned growing up. We were told breakfast is the most important meal of the day.

Makes 18-20 Servings

Ingredients
2 cups unsweetened coconut flakes

2 cups of either sliced almonds or mixed nuts of your choice such as pecans, walnuts, and macadamia nuts.

1 cup shelled raw pumpkin seeds

½ cup sesame seeds

2 tablespoons chai seeds (optional)

½ teaspoon Kosher salt

½ teaspoon ground cinnamon

1/8 teaspoon ground cardamom

½ cup honey

2 tablespoons olive oil or coconut oil

1 teaspoon vanilla extract

Directions
Preheat the oven to 300° F (148.9° C)

Toss coconut flakes with nuts, seeds, salt, cinnamon and cardamom in a large bowl.

In a small saucepan, cook honey, coconut or olive oil over medium heat stirring occasionally until hot, about a minute. Pour over nut mixture and stir to combine.

Spread mixture evenly on a parchment lined baking sheet.Place in oven.

Bake for 12 minutes and stir with wooden spoon. Bake for 13-15 more minutes until golden brown and crisp.

Once cooled, use a pizza slicer or knife to make into squares or bars.

Store in a tightly covered container at room temperature.
